Cream shortening and sugar until fluffy, add eggs and vanilla; mix thoroughly. Blend in the flour, salt and soda to creamed mixture. Mix well.

Boil together chopped dates, sugar, and water until thick stirring constantly; reduce heat, cover and simmer for 5 minutes stirring often. Stir in chopped nuts. Allow to cool. | ||||||||||||||||||||||||
On lightly floured pastry cloth, roll the dough about 1/16 inch thick. Cut with 3 inch round cutter. Place about 1 teaspoon date filling on half of each cookie,
fold dough over filling, press edges together to seal. Brush top with milk or light cream. Heat oven to 400 degrees. Bake 8 to 10 minutes on ungreased cookie sheet. Immediately remove from baking sheet to cooling rack. Yield: approximately 3 dozen. |
